Trying to get children to understand the importance of eating their vegetables can sometimes be a chore. Do you ever ask yourself; why go through that kind of hassle? Is it possible to find recipes that are nutrient dense with a look and flavor that kids love? Something as simple as a smoothie that not only has fruits but vegetables? Well it was harder than I thought! So in this week’s post, I have decided to share with you one of my kids’ favorite smoothie recipes.
A Stubborn Refusal
I am sure many of you, like me, have at least one child that is against anything green or even remotely good for them. If I would allow it, my youngest would only consume fried foods, juice, and candy! He has been like that since before he was born. He is so stubborn in his refusals, that I became concerned. I was concerned about how it would impact his growth and brain development. No one can survive on chicken nuggets, right?
It was then that I devised a plan. I set out on a mission to take normal items and make them in a way that allowed me to pack them with hidden vegetables.
The First of Many
What would be my first recipe? A smoothie! My boys loved smoothies. It was the one thing I could easily get my youngest to consume without a fight. And don’t you know, this smoothie recipe what was the first of many vegetable packed recipes to come.
After many trials wouldn’t you know that even now, years later, this is still one of my children’s favorites drinks!? I am sharing this with you today, so that hopefully it becomes one of your family’s favorites as well.
By now I am sure you are wondering what is in it?
It is a Veggie & Berry (Verry) Smoothie, I have nicknamed the Verry Smart Smoothie!
Verry Smart Smoothie

|Dietary||Gluten Free, Vegan, Vegetarian|
|Meal type||Beverage, Breakfast, Snack|
|Misc||Child Friendly, Freezable, Serve Cold|
- 1 cup Spinach
- 1 Medium Carrot (Chopped into large sections)
- 4 medium slices Cucumber
- 1.5 cups Frozen Berry Medley (mix of raspberry, strawberry, blueberry, blackberry)
- 1 cup unsweetened Coconut Milk
- 1 Large Frozen Banana
|Combine ingredients into a smoothie mixer.|
|Turn on mixer or set to "smoothie" mode, let run until completely mixed.|
|Pour and Enjoy!|
